Greens with Warm Bacon Vinaigrette

Get your greens this week with an unconventional salad even the heartiest of appetites will appreciate. Sweet, savory bacon and its warm pan juices seem to melt fresh greens into a delectable healthy side dish.


3 cups finely chopped fresh kale, watercress, or arugula
4 slices thick-cut bacon
3 tablespoons cider vinegar
2 tablespoons sugar
Salt and black pepper, to taste


1) Place greens in a medium serving bowl; set aside.

2) Heat a heavy skillet over medium; add bacon and cook until crisp, flipping occasionally, about 6 to 8 minutes. Remove bacon from skillet; crumble over greens.

3) Add vinegar and sugar to skillet; heat until dissolved, scraping bottom of pan with a spatula. Season to taste with salt and pepper.

4) Pour warm vinaigrette over greens; serve immediately.
