Braised Short Ribs



1) Season ribs on all sides with salt and pepper.

2) Heat oil in a large, deep skillet over medium-high. Add ribs and brown on all sides, turning occasionally, about 10 minutes total. Remove from skillet; set aside and cover.

3) Add onion, carrots, and celery to skillet; cook until softened, stirring occasionally, about 6 minutes. Add mushrooms and a pinch of salt; cook until liquid is released, about 3 minutes, stirring.

4) Add remaining ingredients and reserved beef to skillet; bring to a boil over high heat. Reduce to a simmer and cook until beef is very tender, about 90 minutes. Serve warm.
