Diet Raspberry and Cinnamon Muffins


2 eggs
150ml low-fat natural yoghurt
2 tablespoons vegetable oil
6 tablespoons semi-skimmed milk
100g wholemeal flour
40g rolled oats
100g self-raising flour
100g brown sugar
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
175g raspberries


Firstly, pre-heat your oven to 200 degrees centigrade.

Then add 100g wholemeal flour, 100g self-raising flour, 40g rolled-oats, 100g brown sugar, 1/2 teaspoon of ground cinnamon and 1 teaspoon of baking powder into a large bowl. Mix the dry ingredients well.

In a separate smaller bowl, add 2 eggs, 150ml low-fat natural yoghurt, 2 tablespoons vegetable oil, and 6 tablespoons of semi-skimmed milk. Mix the wet ingredients well.

Now, add the wet ingredients into the dry ingredients. Mix lightly until only just combined. Add 175g raspberries, and stir once or twice - do not over-mix. Line a muffin tin with 12 paper cases, and spoon the mixture into the cases. Place in the pre-heated oven for 20 minutes. Remove from the oven and cool on a wire rack before eating.
