Simply Devine Blueberry Muffins

This recipe for blueberry muffins uses brown sugar and plain yoghurt and seems healthier than other recipes for the muffins as it contains no butter. I've had plenty of positive feedback and I hope you enjoy them also!


2 eggs
2 cups of brown sugar
1 cup of canola or rice bran oil
1 1/2 teaspoons of vanilla essence
1 cup each: plain yoghurt, milk
4 cups of self raising flour
1 1/2 cups of fresh or frozen blueberries


- Preheat oven to 180 degrees Celsius. Lightly grease a 12 hole muffin pan.

- combine the egg and brown sugar in a bowl. Add the oil and beat well. Add the essence, yoghurt and milk and mix together well.

- sift in 3 cups of the flour, add the blueberries and combine until just moistened. If the mixture is too wet, add more flour until you get the right consistency.

- spoon the mixture into the muffin holes. bake for 25-30 mins until a skewer inserted into the centre comes out clean.
makes 12-14
