Creamed Green Peas

In the store-bought TV dinners, green peas would usually cook up mushy and limp. Here, they are creamed in a light milk sauce, so they get nice and plump but still maintain their vibrant green color and taste.


1 pound frozen or fresh green peas
1/3 cup heavy cream
1 tablespoon olive oil
1 tablespoon sugar
Salt and black pepper, to taste


1) Combine all ingredients in a medium saucepan over medium-high heat; bring to a boil, stirring occasionally. Simmer until peas are softened and liquid is thickened, about 10 minutes, stirring occasionally. Serve.
