Gingerbread with Candied Ginger

Candied ginger brings out both the sweetness and the spice of a traditional holiday loaf. Serve this special bread with pears and warm butter.



1) Preheat oven to 350F. Grease and flour a 9-inch loaf pan.

2) In a large bowl, beat butter and sugar together until fluffy. Add molasses and ginger; mix. Add eggs and beat, one at a time. Set aside.

3) In another large bowl, sift together flour, baking soda, ginger, cinnamon, allspice, nutmeg, and salt. Alternating between flour and buttermilk, add a little of each into wet egg mixture, one at a time, stirring with each addition. Repeat until all flour and buttermilk have been added; mix until smooth.

4) Pour batter into prepared pan; bake until top is golden and springy to the touch, 45 to 55 minutes. Transfer to a wire rack to cool; let stand 10 minutes then invert loaf and serve.
