1) Heat oil in a large skillet over medium. Add onion and cook until softened, stirring, about 3 minutes. Add corn and cook until softened, stirring, about 1 minute. Add tomatoes and cook an additional minute. Add basil and vinegar; stir until basil just wilts, about 30 seconds. Season to taste and serve.
