Quick Pickled Cucumbers

Yes, these are homemade pickles. Make them once, and you might never buy the jarred stuff again.



1) Bring a large pot of water to a boil. Add cucumber and cook until color just turns bright green, about 60 seconds. Transfer to a colander; rinse under cold water 30 seconds and drain. Place in a sterilized glass mason jar.

2) Place remaining ingredients in a small saucepan; bring to a boil over high heat. Simmer 3 minutes, then remove from heat. Pour mixture over cucumber in jar; liquid should cover vegetables completely. Allow to cool at room temperature; seal and store in refrigerator. Keeps 3 months.
