Beer-Marinated Fish Tacos with Cucumber Salsa



1) Combine beer, oil, salt, cumin, and pepper in a small bowl; whisk well. Place fish in a shallow dish; pour beer mixture over and turn to coat. Cover and refrigerate 30 minutes.

2) Meanwhile, prepare the salsa: Combine all ingredients in a medium bowl; toss well. Set aside.

3) Cook the fish: Preheat a grill or broiler. Remove fish from marinade, shaking off excess. Place directly on oiled grill or on a baking sheet under the broiler. Cook until fish just flakes, about 7 to 9 minutes. Remove from heat; set aside and flake with forks.

4) Assemble the tacos: Place shredded fish in each tortilla. Top with salsa and serve immediately.
