Cucumber Tea Sandwiches

Enjoy these tasty bites of Britain with a cup of tea and a couple of good friends.


1/3 cup chopped fresh herbs (try basil, mint, or parsley)
4 tablespoons butter, softened
4 tablespoons mayonnaise
8 slices rye or white bread
1 small cucumber, thinly sliced


1) Combine herbs, butter, and mayonnaise in a food processor; puree until smooth.

2) To serve, smear about 1 tablespoon herb mixture on each slice of bread. Top 4 slices with sliced cucumbers; top with remaining 4 slices bread. Slice each sandwich in half and serve.
