Cucumber Gazpacho

Cucumbers replace traditional tomatoes in this delightfully spicy, cooling summer soup.



1) Combine cucumbers, yogurt, basil, pepper, garlic, oil, juice, salt, and pepper in a food processor; puree until smooth. Chill 2 to 4 hours.

2) Ladle chilled soup into serving bowls; top with a few pieces of shrimp, a basil leaf, and a few drops of hot sauce. Serve immediately.
