Parmesan Quinoa with Spring Vegetables

1) Combine quinoa and water in a small pot; bring to a boil over high heat. Cover and cook at a low simmer until quinoa is fluffy and water is absorbed, about 12 minutes. Set aside.

2) Melt butter in a medium skillet over medium heat. Add leek and onion; cook until softened, stirring occasionally, about 5 minutes. Add garlic and thyme; cook until fragrant, stirring, about 1 minute. Add mushrooms and cook until softened, stirring occasionally, about 4 minutes.

3) Add peas and reserved quinoa to skillet; cook until heated through, about 1 minute. Season to taste with salt and pepper. Top with cheese and serve.
