Leek Soup with a Beefy Twist


1 cup chopped leeks (make sure it's the white part)
1 1/4 cups milk
2/3 cup water
3 tablespoons butter
1/4 teaspoon fresh garlic, chopped or minced
1/4 teaspoon prepared wasabi
1/2 cup beef broth, double strength if possible
1 med potato, boiled & mashed, or potato mix equiv.


In a medium pot, melt butter over medium-high heat.

Add leeks and garlic, cook 5 minutes.

Add beef broth, water, and wasabi; bring to boil.

Reduce heat, cover and simmer 10 minutes.

Stir in milk.

Add mashed potato, stir, and serve.
