Spring Pea Soup



1) Heat oil in a medium pot over medium; add shallots and cook until softened, stirring occasionally, about 3 minutes. Add potato and thyme; cook 1 minute. Add broth and bring to a boil over high heat; cover and simmer 10 minutes.

2) Add peas to pot; simmer 10 minutes. Transfer to food processor in batches; puree until smooth.

3) Strain, if desired, and serve warm. Top with yogurt and enjoy.
