Preserved Lemon Relish



1) Combine lemon slices, juice, and salt in a medium pot; bring to a boil over high heat. Lower to a simmer and cook, covered, 10 minutes. Uncover pot and return to a boil over high heat; simmer until liquid has thickened, about 5 minutes, stirring occasionally.

2) Transfer mixture to a medium bowl; allow to cool. Chop lemon slices; return to bowl. Add remaining ingredients; mix well. Serve warm or chilled.
