Easy Winter Ratatouille

While the traditional French version can take hours, this ratatouille can be done in a fraction of the time, and it uses hearty winter vegetables.

1) Heat 3 tablespoons oil in a medium hot over medium. Add onions and garlic; cook until softened, stirring frequently, about 8 minutes. Add crushed tomatoes, bay leaf, thyme, rosemary, and salt; mix well. Bring to a boil over high heat; reduce to a low simmer and cook, covered, 30 minutes.

2) Meanwhile, arrange eggplant, sweet potato, zucchini, and parsnips in a single layer in a large saucepan; use two saucepans if space requires. Add water and cover. Bring to a boil over high heat; reduce to a low simmer and cook until softened (but not mushy), about 25 minutes, addition more water as necessary to prevent burning.

3) When vegetables are softened, add to pot of tomato sauce. Add remaining 1 tablespoon oil and balsamic vinegar; mix gently. Cook over low heat, covered, 10 minutes, until slightly thickened. Serve warm.
