Asian Beef Noodle Soup



1) Season beef with salt. Heat oil in a large pot over medium-high. Add beef and cook until brown on all sides, about 8 minutes total. Add water, sherry, soy sauce, fish sauce, garlic, ginger, jalapeno, sugar, five-spice, and star anise. Bring to a boil over high heat. Reduce to a gentle simmer and cook, covered, 90 minutes, skimming fat from the top as needed.

2) Remove beef; chop and set aside. Strain broth and return to pot. Return to a boil over high heat; add noodles, vegetables, cilantro, and scallions; cook until noodles are soft, about 4 minutes.

3) To serve, spoon into large bowls and top with reserved beef.
