Beef Stroganoff



1) Bring a large pot of water to a boil over high heat. Add noodles and cook until soft, 3 to 4 minutes. Drain and set aside.

2) Meanwhile, melt butter and oil in a large skillet over medium-high heat. Add steak and cook until lightly browned, about 3 minutes. Remove from skillet and set aside. Add onion and garlic; cook until softened, about 4 minutes, stirring. Add mushrooms and cook until softened and liquid has evaporated, about 4 minutes, stirring occasionally.

3) Add broth and red wine; add steak back to pan. Bring to a boil and simmer 4 minutes, until slightly thickened. Whisk lemon juice and flour together in a small bowl; add to skillet and stir well. Cover and cook over medium-low until smooth and thick, about 15 minutes. Stir in sour cream.

4) To serve, place a mound of noodles in a bowl. Spoon a hearty portion of sauce over and top with parsley.
