strawberry coconut muffins

I noticed that there are few coconut recipes available so decided to create a cocnut fruit mix muffin. I chose strawberry but I suspect that this could be adapted to use pineapple instead, or even blueberry or cranberry.


2 Cupfuls all purpose flour
3/4 cupful sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 cupful dried whole strawberries chopped finely
1 cupful dessicated coconut
3 tablespoons vegetable oil
1 egg lightly beaten
1 cupful milk
1 tablespoon strawberry jam


Heat oven to 400F (190C)
Mix flour, sugar,baking powder, coconut and baking soda together in one bowl.
Mix oil, egg, milk and jam in another bowl.
Grease a muffin pan
Pour oil,egg, milk and jam mixture into the bowl of dry ingredients.
Fold together gently until to a smooth batter
Add the chopped strawberries and spoon into muffin pan.
Cook for 15 - 20 minutes until goldrn brown and pulling a little away from edge of tin.
Makes 12.
