Slow-Cooker Moussaka

Directions:

1) Heat oil in a large skillet over medium. Add ground beef; cook until browned, stirring occasionally, about 5 minutes. Add onion, bell pepper, garlic, cinnamon, salt, and pepper; cook until softened, stirring occasionally, about 5 minutes. Add tomatoes and wine; stir well. Remove from heat; set aside.

2) Arrange a layer of eggplant slices along the bottom of the slow cooker. Add half of the beef sauce. Repeat with an additional layer of eggplant and sauce; top with final layer of eggplant.

3) Cover and cook on low 4 hours. Top with cheese and serve.
