Carrot Bread

A hearty and savory carrot batter bread bursting with flavor. Grated carrots, sweet applesauce and chopped walnuts make this simple carrot bread moist and delicious, and perfect for a healthy and delicious snack any time.



1. Prepare an 8-in x 4-in. x loaf pan with nonstick cooking spray. Dust with flour and set aside. Preheat oven to 350 degrees F.

2. In a large bowl combine the sugar, flours, baking powder, baking soda, salt and cinnamon.

3. In small bowl combine applesauce, eggs and vanilla. Fold into dry ingredients and stir until just moistened. Fold in carrots and walnuts.

4. Pour batter into prepared loaf pan and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to wire rack.
