Gazpacho with Avocado

Gazpacho is a cold Spanish soup that has the hearty flavors of fresh tomatoes and the refreshing chilled flavor of cucumber. The diced avocado on top creates a creamy balance with the acidity of tomatoes and vinegar. The best way to eat this soup would be on a hot day with a refreshing salad.


4 medium tomatoes
1 small red bell pepper
1/4 cup red wine vinegar
2 tablespoons olive oil
1 cup water
1 medium cucumber
2 cloves fresh garlic
salt and pepper, to taste.


1. In a blender combine all the ingredients, except the avocado.
2. Puree until very smooth and no lumps remain, about 5 minutes.
3. Add salt and pepper to taste.
5. Top with diced avocado and serve cold.
