Easy California Roll Sushi

Sushi is so expensive at restaurants and very impressive at parties. This would be a great and easy way to use avocados and also impress your friends.


1 cups sushi rice, or short grain rice
1 tablespoon rice wine vinegar
1 tablespoon sugar
1/2 tablespoon salt
4 sheets nori (seaweed wrappers)
4 sticks imitation crab meat
1 avocado, pitted, peeled, and sliced
1 cucumber, peeled, seeded, cut into matchstick size pieces
wasabi, to taste
pickled ginger, to taste
soy sauce, to taste


1. Cook the sushi rice in one cup of water with the lid on until tender, about 15 minutes. After cooked let stand for 10 minutes covered.
2. In a large bowl combine vinegar, sugar, and salt. Mix until dissolved.
3. When the rice is cooled enough to handle, toss with the vinegar and place in the refrigerator. Let cool.
4. Just before dinner time pull the rice out and cut the avocado and cucumber.
5. On top of a sheet of plastic wrap, place a sheet of nori.
6. On top make an even layer of rice, about 5 inches by 4 inches rectangle and about 1/4 inch thick.
7. Along the middle layer a piece of crab, avocado, and cucumber.
8. Carefully roll with the nori on the outside, using the plastic wrap to hold it tightly in place.
9. Continue to repeat with a new piece of plastic wrap and nori and make the other 3 rolls.
10. While still in the plastic wrap cut into pieces, remove the plastic and place on a platter.
11. Serve with soy sauce, wasabi and pickled ginger on the side.
