California Queso

Avocado adds some fresh summer flavors to classic spicy cheese dip.


1/2 package (16 ounces) velveeta cheese, cubed
16 ounces monterrey jack cheese, shredded
1 small can rotel
2 small cans diced green chiles
2 whole avocados, peeled, pitted, diced
1 family size bag of tortilla chips


1. In a large microwave safe bowl combine everything except the avocado. Melt on high in the microwave or in a crock pot.
2. When melted fold in the avocado. Serve with tortilla chips.

Any cheese that is good at melting can be used instead of monterrey jack. Gouda, fontina, colby, or mozzarella.
