Atkins Safe Avocado Burger

This is a great recipe for people on Atkins, low carb, high fiber and protein. It has meat but also has a healthy dose of vegetables. Serves 4.


4 hamburger patties
4 slices pepper jack cheese
1 medium tomato sliced
1 whole avocado, peeled, pitted, sliced
2 cups shredded lettuce
1/2 cup mayonnaise
2 tablespoons franks red hot


1. In a small bowl combine mayonnaise and hot sauce.
2. In a large skillet cook hamburger patties over high heat until browned on the outside and cooked to desired temperature. About 4 minutes on each side for medium.
3. Top with cheese and let it melt.
4. Place lettuce on a plate and put hamburger patty on top. Then top with tomatoes and avocados. Season with salt and pepper.
5. Drizzle with mayonnaise mixture and serve.
