Strawberries and Wine Granita

This is an easy recipe for a dessert that does not require an ice cream maker. Juts simply keep stirring and the end product will be like a grown up snow cone. Makes 8 servings.


1 cup sugar
1 cup water
8 cups fresh strawberries, stem removed, cut in half
1 cup red wine, fruity preferred

2 cups sliced strawberries and a few more whole for garnish
1/4 cup red wine, fruity preferred
3 tablespoons sugar


1. In a small saucepan over medium heat combine the sugar and water and stir until the sugar dissolves. Let cool.
2. Place the strawberries, wine and syrup in a food processor and puree until smooth, about 3 minutes.
3. Strain this mixture into a 9 by 13 inch baking pan. Cover and freeze for 1 hour.
4. Stir the granita with a fork and break up any solid peices with the fork.
5. Continue to freeze until firm, scraping with a fork every 30 minutes.
6. For the garnish, mix the sliced strawberries with the wine and sugar. Let rest for 30 minutes or until the sugar dissolves.
7. Divide the granita among 8 nice glasses and pour the strawberry mixture over.
8. Garnish with a whole strawberry.

Frozen strawberries can be used to make the granita but you definitely need fresh for the garnishes.
