Sparkling Strawberry Sorbet

Sparkling wine is used in this recipe to add a refreshing flavor to a strawberry and orange sorbet. Serves 8.

1/4 cup water
1/2 cup sugar
1 10-ounce package frozen strawberries, thawed
1 cup sparkling wine
1 cup orange juice
8 whole strawberries

1. In a small saucepan over high heat bring the water and sugar to a boil and stir until the sugar dissolves. Let cool.
2. Puree the strawberries in a food processor until smooth.
3. In a large bowl combine the sugar syrup, strawberries, wine, and orange juice. Place in the refrigerator until very cold.
4. Process in an ice cream maker according to the manufacturer's instructions.
5. Transfer to containers and freeze overnight before serving.
6. To serve; scoop sorbet into 8 bowls and garnish with a fresh strawberry.

This recipe can also make a delicious cocktail. Make the sorbet and put at two tablespoons in the bottom of a champagne glass. Top with more sparkling wine.
