Sardines Wrapped in Proscuitto

This simple recipe is fantastic for serving at a dinner party and showcasing a hugely underrated fish - the sardine. Sardines are stuffed with cream cheese and herbs before being wrapped in proscuitto and oven-baked until cooked.


4 sardines, cleaned, boned and gutted
4 tbsp. cream cheese
Small handful fresh parsley
Salt and pepper
1 garlic clove
4 large slices or 8 small slices proscuitto


1. Finely chop the parsley and mince the garlic clove. Mix them both into the cream cheese, then season well.

2. Cut a hole into the belly of the fish, creating a cavity.

3. Put one tbsp. of the filling into each fish. Season well with pepper on the outside, then wrap the fillet in the ham.

4. Join side down, put the fish fillets onto a baking tray and cook for 7-9 minutes until the fish is fully cooked and no longer translucent in the centre. Serve.

Serve this tasty fish dish with some homemade wedges and some steamed vegetables for a quick and tasty dinner. This recipe serves two.
