Easy Bean Curry

This curry is made with a tin of baked beans, some spices and some fresh chilli. Great for serving with rice or even as a topping on a sandwich. This curry would also be delicious served in a wrap with a little bit of chicken - just be imaginative and you'll come up with plenty of ways to serve this.


1 420g tin baked beans
1 tbsp. oil
1 tsp. mustard seeds
1 tsp. cumin seeds
1/2 tsp. turmeric
1/2 tsp. ground coriander
Handful fresh coriander
Pinch salt
Pinch chilli powder


1. Heat the oil then add the mustard seeds. When they begin to pop, turn the heat down low and add the cumin seeds, turmeric and ground coriander.

2. Stir in the beans, salt and chilli powder, then simmer for a few minutes.

3. Finely chop the coriander and stir through the beans. Serve hot or cold.

This dish serves two to three people, depending on how you use it, but it can easily be adapted to serve more. Use a tin of chickpeas with added water if you want to alter this dish or if you don't like beans.
